  • 4 boneless, skinless chicken breasts

  • 1/4 cup fresh lemon juice (about 2 lemons)

  • 3 tablespoons olive oil

  • 4 garlic cloves, minced

  • 1 teaspoon lemon zest

  • 1 teaspoon dried oregano

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 tablespoon chopped fresh parsley (for garnish, optional)


Instructions

  1. In a small bowl, whisk together the lemon juice, olive oil, garlic, lemon zest, oregano, salt, and pepper.

  2. Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, making sure all pieces are evenly coated.

  3. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, up to 4 hours for more flavor.

  4. Preheat your grill to medium-high heat. Lightly oil the grates to prevent sticking.

  5. Remove the chicken from the marinade and discard any remaining liquid.

  6. Grill the chicken for about 6–7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the juices run clear.

  7. Remove from the grill and let the chicken rest for 5 minutes before serving.

  8. Garnish with chopped parsley if desired, and serve with steamed vegetables or a fresh salad.

Notes

Do not marinate the chicken for more than 4 hours, as the lemon juice can start to break down the protein and make the texture mushy.

This recipe can also be baked in the oven at 400°F (200°C) for 20–25 minutes if you don’t have a grill

Try adding red pepper flakes to the marinade for a spicy twist.

Double the marinade and reserve half (before adding raw chicken) for drizzling over cooked chicken as a sauce.
