Ingredients
For Cloud Bread:
3 large eggs, separated
3 tablespoons full-fat Greek yogurt or cream cheese
1/4 teaspoon cream of tartar
Pinch of salt (optional)
For the Sandwich Filling:
2 eggs (scrambled or fried)
2 slices of turkey bacon or vegetarian bacon
2 slices of avocado
1 slice cheddar cheese (or dairy-free alternative)
Handful of baby spinach
Salt and pepper to taste
1 teaspoon olive oil or nonstick spray (for cooking)
Instructions
Preheat your oven to 300°F (150°C) and line a baking tray with parchment paper.
Separate the eggs into two bowls—whites in one, yolks in the other.
Whip the egg whites with cream of tartar until stiff peaks form. This is key to making fluffy cloud bread.
Mix the yolks with yogurt or cream cheese until smooth. Fold gently into the whipped egg whites without deflating them.
Spoon 6 mounds of the mixture onto the tray. Shape into bun-sized rounds.
Bake for 25 to 30 minutes until golden and slightly firm. Let cool before using.
While cloud bread bakes, heat a skillet over medium heat with a teaspoon of oil or spray.
Cook turkey bacon until crisp, and cook eggs to your preference (fried or scrambled).
Assemble the sandwich: Place spinach, egg, cheese, avocado, and bacon between two cloud bread rounds. Season with salt and pepper.
Optional: Toast the assembled sandwich in the skillet or toaster oven for 1–2 minutes to melt the cheese slightly.
Notes
Cloud bread can be made ahead and stored in the fridge for up to 5 days or frozen for up to 1 month.
Add herbs or garlic powder to the cloud bread batter for extra flavor.
